Cookies are one of the joys of life. Everyone loves cookies; even people who can't eat gluten. Fortunately, it's easy to make gluten-free cookies with a few simple ingredients. The key ingredient in these recipes is gluten-free flour mix, which is available at any grocery store.
Gluten-Free Sugar Cookies
You can frost these sugar cookies after you have baked them and allowed them to cool. They're delicious at Christmas or any time of the year.
Ingredients
- 3 cups gluten-free flour mix
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 cup gluten-free margarine or butter, softened
- 1 cup sugar
- 2 eggs
Instructions
- Preheat the oven to 350°F.
- Sift the gluten-free flour mix, baking soda, and cream of tartar into a large mixing bowl.
- Add the butter or margarine and mix well.
- In a separate bowl, combine the sugar and eggs and beat until combined. Beat into the flour mixture.
- Place the dough in the refrigerator and chill for 1 hour.
- Sprinkle the work surface with some gluten-free flour. Roll out the dough to 1/4 to 1/2" thickness using a rolling pin coated with more gluten-free flour.
- Cut into desired cookie shapes using cookie cutters, or use an overturned glass to make circles. If you aren't going to frost them, sprinkle each cookie with a bit of granulated sugar.
- Bake the cookies for 7 to 12 minutes or until they are light golden brown.
- Remove the cookies from the cookie sheet with a spatula and cool completely on a wire rack.
Yields 4 dozen cookies
Gluten-Free Chocolate Chip Cookies
While most brands of chocolate chips are gluten-free, you should always check before you buy. Verified gluten-free chocolate chip brands include Hershey's and Nestle. Toffee bits are usually gluten-free too, but Heath brand is verified.
Ingredients
- 1 cup butter, softened
- 1-1/4 cups brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons gluten-free vanilla
- 1 egg
- 2 egg yolks
- 2-1/3 cups gluten-free flour mix
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups gluten-free semisweet chocolate chips
- 1 cup gluten-free toffee bits
Instructions
- In a large bowl, combine the butter, brown sugar, granulated sugar, and vanilla and beat well.
- Add the egg and egg yolks and beat again until combined.
- Add the flour mix, baking soda, and salt and stir until mixed.
- Stir in the chocolate chips and toffee bits.
- Cover the dough and chill for 2 hours.
- Preheat the oven to 325°F.
- Drop the dough by tablespoons onto ungreased cookie sheets, placing them about 3 inches apart.
- Bake for 11 to 16 minutes or until the cookies are light golden brown.
- Cool on the cookie sheets for 2 minutes, then carefully remove to a wire rack to cool completely.

Gluten-Free Peanut Butter Cookies
While you can make gluten-free peanut butter cookies with no flour at all, this recipe more closely resembles the wheat version. Oats are naturally gluten-free, but unless they are made in a dedicated facility, they could have trace amounts of gluten. Check the label before you buy.
Ingredients
- 1 cup butter, softened
- 1 cup gluten-free peanut butter
- 1 cup brown sugar
- 2/3 cup granulated sugar
- 1/2 cup gluten-free powdered sugar
- 2 teaspoons gluten-free vanilla
- 2 eggs
- 2-1/2 cups gluten-free flour mix
- 1/2 cup ground gluten-free oats
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped peanuts
Instructions
- In a large bowl, combine the butter, peanut butter, brown sugar, granulated sugar, and powdered sugar and beat until combined.
- Add the vanilla and eggs and mix well.
- In a medium bowl, combine the flour mix, ground oats, baking soda, baking powder, and salt and mix well. Stir into the butter mixture.
- Add the peanuts and mix until combined.
- Cover and chill the dough for 2 hours.
- Preheat the oven to 375°F.
- Shape the dough into 1-1/4" balls and place 3" apart on an ungreased cookie sheet.
- Using a fork dipped in granulated sugar, flatten each ball of dough, making a crisscross pattern.
- Bake the cookies for 8 to 11 minutes or until they are light golden brown.
- Cool the cookies on the cookie sheet for 2 minutes, then carefully remove to wire racks to cool.
Makes 4 dozen cookies
