Tzatziki Dip

Tzatziki Sauce or Dip

Tzatziki is a very versatile dish. Often served as an appetizer as a dip for fresh vegetables, Tzatziki is also served as a salad dressing, sauce or spread.

Ingredients

  • 8 ounce container plain Greek yogurt
  • 1 cucumber, peeled, seeded and cut into pieces
  • 2 cloves garlic, chopped
  • ½ tablespoon fresh dill, chopped
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Fresh vegetables of your choice for dipping

Directions

  1. Place the yogurt, cucumber, garlic, dill, olive oil, lemon juice, salt and pepper into a blender or food processor.
  2. Blend or process until well mixed.
  3. Place into a covered container.
  4. Refrigerate for at least one hour before serving as a dip with your favorite fresh vegetables.

Baked Tomato

Ingredients

  • 2 large tomatoes
  • Extra virgin olive oil (amount varies based on the size of the size of tomatoes)
  • 2 cloves garlic, finely chopped
  • 1 tablespoon basil, finely chopped (can substitute 1 teaspoon dried basil)
  • Salt and pepper to taste
  • Whole grain bread (optional)

Directions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Brush the bottom of a baking dish with olive oil.
  3. Slice tomatoes into ½-inch thick slices.
  4. Place the tomatoes slices into the baking dish.
  5. Sprinkle the garlic and basil onto the tops of the tomatoes.
  6. Add salt and pepper to taste.
  7. Drizzle olive oil over the sliced tomatoes.
  8. Bake for approximately 20 - 25 minutes.
  9. Remove from baking dish and serve.
  10. Pour the olive oil and tomato juice from the bottom of the pan into a small bowl as a dipping sauce for warm whole grain bread. (optional)

White Bean Dip

Ingredients

  • 1 small onion, diced
  • 1 tablespoon minced garlic
  • 1 red bell pepper, diced
  • 2 cans navy beans
  • Extra virgin olive oil

Directions

  1. Saute the onion, garlic and a diced red bell pepper in virgin olive oil until tender, and onions are translucent.
  2. Drain and rinse two cans of white navy beans.
  3. Put all ingredients in a food processor and blend until smooth.
  4. Add sea salt and freshly ground pepper to taste.
  5. Drizzle with olive oil.
  6. Serve with warm slices of whole wheat pita bread.
